This smaller spouted pitcher is perfect for those drinks that only require a small amount of steamed milk. Using the best-fitting steam pitcher for a given drink not only eliminates the possibility of waste but also allows a barista to obtain perfect milk texture.  A macchiato may only require 1-2 ounces of frothed milk, and an au lait may only require 4-6 ounces of frothed milk which means that even in a 20-ounce pitcher, a barista can potentially end up frothing twice the amount needed for many drinks. Leftover milk is either wasted or worse, re-steamed. With the 12-oz pitcher a barista can exact the amount of milk needed and be waste free.
